Was it just me or did you talk about not wanting to make the hashbrowns any other way then with butter but didn't you use Olive Oil then in the video? I'd never really thought about it before but man hash browns are easy to make, I'm definitely going to give that a try.

Those potatoes look good on the side, but I also find it to be my favorite add-in within the egg itself. It rounds out the egg to my tastes because an egg tends to have some texture issues that seem to disappear when you add the potato. Could just be me.
I just printed this out and look forward to making it as soon as I pick up the ingredients.

Joe, this is your best dish yet (Besides the Eggplant Parmesan). Omlettes are great for brunch (For those of us who get up late on the weekends).
